Across Europe, enjoying a carefully crafted pour alongside dessert has long been part of the dining tradition. Rather than making dessert sweeter, the right pour adds balance, extends the moment, and invites people to linger a little longer around the table. At Sababay, that tradition is reflected in Mistelle, a Vin de Liqueur inspired by French craftsmanship and thoughtfully crafted in Bali.

First introduced in 2020, Mistelle returns as part of Sababay's 15 Years of Crafting Pride with a refined profile. While staying true to its identity, the latest evolution brings a cleaner finish, enhanced acidity, and more balanced sweetness—reflecting Sababay's continued commitment to refining every bottle through craftsmanship.

Crafted Through the Vin de Liqueur Tradition

Mistelle is crafted using the traditional Vin de Liqueur method with 100% Muscat Saint Vallier grapes grown locally in Bali.

Its production follows two separate paths:

  1. One portion remains as fresh, unfermented grape juice.

  2. The other portion is distilled into Sababay's own Eau de Vie (grape spirit).

Through a delicate process known as reunification, the two are brought back together. This technique preserves the vibrant, fresh character of the Muscat grapes while adding an elegant depth and warmth. By producing its own Eau de Vie in-house, Sababay oversees every single step of the process from vineyard to bottle, expressing the true terroir of Bali.

Mistelle is inherently made to complete a meal, offering a simple yet elegant pairing for relaxed gatherings and meaningful conversations. Rather than waiting for a rare special occasion, enjoying Mistelle with dessert is an everyday invitation to slow down and savour the moment—one bite, one sip, and one conversation at a time.

The Ritual: Another highly recommended way to enjoy Mistelle is Wine à la Piscine—a classic French serving style where the Vin de Liqueur is poured over plenty of ice in a large, wide-bowled glass.

Simple, refreshing, and incredibly easy to enjoy, it’s a serving ritual that feels naturally at home in Bali's tropical afternoons. Whether you are lounging by the pool or hosting a relaxed sunset gathering with friends, the melting ice beautifully opens up the floral aromas of the Muscat grapes.
