At the heart of Sababay is our winemaker, Guillaume Quéron, a man whose story blends Old World legacy with New World innovation. Forged in the vineyards of Bordeaux and trained under the legendary "garage wine" pioneer Jean-Luc Thunevin, Guillaume’s expertise is rooted in a passion for quality over rigid tradition. Drawn to the pioneering spirit of New Latitude Wines—where vineyards flourish far beyond the traditional cool-climate regions—he found in Bali a vibrant, untapped terroir brimming with potential. Here at Sababay, Guillaume saw the opportunity to craft world-class wines in a tropical climate, breaking boundaries and redefining what’s possible.

Since his arrival in 2022, Guillaume has masterfully adapted his world-class skills to Bali's unique volcanic terroir. His philosophy is one of respect and collaboration, refusing to simply replicate a Bordeaux style. Instead, he listens to the land and the local palate, focusing on a relentless cycle of improvement for every wine we produce.

By championing sustainability, supporting local farmers, and introducing technical innovations like significantly reducing sulfites, he works to ensure every bottle is a pure, fresh, and authentic expression of its tropical home.
